Quick Vegetarian Quesadillas

A delicious, quick, and easy recipe, perfect for anyone who is vegetarian or trying to eat more plant-based. Substitute the parmesan cheese for a vegan option for a dairy-free recipe. Even better, these quesadillas can be frozen and kept for later.

Ingredients

  • 6 whole-wheat tortillas
  • 1 cup shredded parmesan cheese
  • 1 small white onion sliced thin
  • 1 medium zucchini sliced thin
  • 1 small red pepper chopped
  • 1/2 cup frozen corn
  • 2 tbsp fresh cilantro
  • 2 cloves fresh garlic pressed
  • cooking spray

Instructions

  • Warm the oil spray in a large frying pan. Add the pressed garlic in the pan over medium heat.
  • Saute the onion for 3 minutes or until translucent. Add corn and allow it to cook for 2 minutes. Mix in the zucchini and pepper. Reduce heat to low.
  • Lightly coat a separate pan with cooking spray and set over low heat. Place one whole-wheat tortilla in the pan and cover the right half with the vegetable mixture.
  • Lightly sprinkle shredded cheese and cilantro over the vegetable mixture and then fold the left half of the tortilla over the right. Cook for 2 minutes on each side. Repeat until the vegetable mixture is used up.
